Abstract：
一种快速检测食品中沙门氏菌的方法，涉及食品检测技术领域。用PCR方法对待测食品样品中沙门氏菌的inVA基因进行检测，包括以下步骤：将待测食品样品加入缓冲蛋白胨水中增菌，然后用生理盐水洗菌后煮沸裂解细胞，离心取上清液；以获得的上清液为PCR反应模板，并利用沙门氏菌inVA基因的检测引物进行PCR检测；其中，沙门氏菌inVA基因的检测引物为：上游引物inVAF：5’‑tcctccgctctgtctactta‑3’；下游引物inVAR：5’‑accgaaatattcattgacgtt‑3’。本发明方法的检测结果与传统培养方法和系统检测结果一致，检出限为100cfu/25g，准确性达100％。
